S3 means several things. The toe has a steel cap that protects against falling objects. A plank, a brick or a heavy tool that falls on your foot doesn’t crush your toes.
The midsole is puncture resistant. A nail sticking out of a plank can’t go through the sole into your foot.
The leather upper is treated against water. You can stand in wet grass or walk through a puddle without wet feet.
The sole has a deep profile and grips on wet and oily surfaces. On a wet scaffold or a muddy site, you don’t slip.
Many safety shoes feel heavy and stiff. These are built more like a sturdy hiking shoe. The fit is comfortable, and you can wear them all day.

Clean off mud after use and let the shoes dry at room temperature, not on a heater, so the leather doesn’t crack.
